Icings:

Buttercream - a soft, not too sweet, melt in your mouth icing. Can be coloured to suit.

Ganache - a dense, chocolatey icing, almost like a truffle centre. Available in Chocolate and White Chocolate

Rolled Fondant - the icing I use on Wedding Cakes. Smooth, flat and white, it can be coloured to suit. It can also be embossed to look like lace.
